<P>PROBLEM TO BE SOLVED: To provide a manufacturing method of meat substitutional food raw material capable of obtaining palate feeling and taste of meat and good for health by using devil's tongue as a main ingredient. <P>SOLUTION: The freezed devil's tongue is thawed, thereafter the moisture of the thawed devil's tongue is removed by pressurization or others, egg white or whole egg of 5 wt.%-30 wt.% is added and mixed into the devil's tongue as the main ingredient of 50 wt.%-80 wt.% having water content of 20 wt.%-30 wt.%, to obtain paste-like mixture by mixing them with a mixer, and the meat substitutional food raw material is manufactured by adding and mixing/stirring powder of flake of protein based water-insoluble food or the water-insoluble food itself of 2 wt.%-30 wt.%, wheat flour of 1 wt.%-10 wt.%, and either one of consomme extract powder or beef extract powder of 0.5 wt.%-3 wt.% by weight to the paste-like mixture. <P>COPYRIGHT: (C)2008,JPO&INPIT |
