A baked cake made of wheat flour, rice bran oil and grain syrup and its preparation method are provided to simplify the production process by performing a baking step instead of a frying step and maximize the marketability. A baked cake made of wheat flour, rice bran oil and grain syrup is prepared by the steps of: (a) mixing roasted wheat flour and rice bran oil in a weight ratio of 100:10~40, kneading the mixture, and forming the dough; (b) baking the formed dough at 120~180°C for 20~50min; and (c) dipping the baked dough in grain syrup at 80°C for 15min. In the step (a), the mixture is kneaded with oligosaccharide and distilled liquor, wherein the volume ratio of the oligosaccharide and distilled liquor is 1:0.5~2. The step (a) further comprises freezing a mixture of peanut and rice bran oil for 20~30hr and putting the frozen mixture in the dough, before forming the dough. The mixture of peanut and rice bran has a thickness of 3~5mm. |
