摘要 A method for preparing a wine is provided to obtain the wine, which has excellent taste, color and flavor and includes eleutheroside and quercetin aglycon like materials, from Acanthopanax senticosus and grape by mixing the Acanthopanax senticosus with the grape, fermenting the mixture, distilling the fermented product, mixing the distillate with wood chips and then ripening the mixture, and further performing a second fermentation of a fermented wine with wood chips. A method for preparing a wine including Acanthopanax senticosus comprises the steps of: (a) mixing 2-10 wt.% of Acanthopanax senticosus fresh fruits or fresh frozen fruits with 90-98 wt.% of grape juice to prepare a fermentation raw material; (b) after inoculating the fermentation raw material into yeast and initiating fermentation by stirring it 2-3 times every day with maintaining an initial temperature at 15-16 deg.C, fermenting it for 10-25 days; (c) after putting 10-30 kg of a fermented product obtained from the step(b) in a vacuum concentrator, distilling it at a temperature of 55-74 deg.C under the vacuum degree of 0.06-0.08 torr; (d) after mixing 1 liter of a distilled liquor obtained form the step(c) with 20-100 grams of wood chips, ripening it at a temperature of 12-16 deg.C for 100-365 days; and (e) after making juice out of the fermented distilled liquor obtained from the step(d), performing post-treatment, wherein the wood chips are wood chips of Acanthopanax senticosus or Quercus. Further, the species of the grape is an MBA.
