<P>PROBLEM TO BE SOLVED: To provide a method for producing fried products by which defective products caused when frying raw material to make fried products are reduced and an amount of oil required for producing the fried products is reduced: and to provide a vacuum fryer designed so as to reduce defective products when frying the raw material to make fried products and an amount of oil required for producing the fried products. <P>SOLUTION: The method for producing fried products where the fried products are produced from raw material with a vacuum fryer (1), comprises a first fry process of agitating the raw material in an oil-in condition where the raw material is sunk under the oil surface L of the vacuum fryer 1; a second fry process of alternate repetition of agitation of the raw material in the oil-in condition and agitation of the raw material in an oil-surface condition while floated near the oil surface L in a first cycle; and a third fry process of alternate repetition of agitation of the raw material in the oil-in condition and agitation of the raw material in the oil-surface condition in a second cycle shorter than the first cycle so that the time in the oil-in condition is the same or shorter as or than the time in the oil-surface condition. <P>COPYRIGHT: (C)2008,JPO&INPIT |
