A method of producing chlorella extract by reaction of a Chlorella suspension with any one of a cell-wall degrading enzyme and protease is provided to improve the content of chlorella growth factor and extract yield. A Chlorella suspension is reacted with any one of a cell-wall degrading enzyme and protease and extracted at 90 to 100deg.C for 20 to 60min. The obtained hot water extract is filtered and freeze dried. The cell-wall degrading enzyme is beta-1,3-glucanase, cellulase, xylanase and pectinase. The protease is Papain, Kojizyme, Alcalase, Esperase, Neutrase and Flavourzyme. |
