<p>The invention relates to a method for preparing dough that comprises oat by an industrial process. According to the method, oat is added to the dough partially in the form of oat flour and partially in the form of kernels so that the kernels are capable of binding the liquid in the dough, so that the dough is in a solid state. In addition, vegetable-based fibre that forms a hydrocolloid and starch that contains no ²-glucan are added to the dough. The invention also relates to a bakery product prepared by the method.</p> |
