<P>PROBLEM TO BE SOLVED: To provide a method for producing pasty fruit flesh, efficiently producing in a short time pasty fruit flesh excellent in palate feeling and flavor inherited from fruits. <P>SOLUTION: This method for producing the pasty fruit flesh comprises a freezing process of rapidly freezing fruits or fruit flesh, a soaking process of soaking the frozen fruits or fruit flesh in a sugar liquid so as to bring to a prescribed sugar content, and a kneading process of kneading while mixing sugar with the fruits or fruit flesh after soaking in a pasty condition. <P>COPYRIGHT: (C)2008,JPO&INPIT |
