The exchanger has an area for a medium that is to be cooled, another area for a cooled medium, and a heat transferring surface (2) transferring heat between the areas. The medium to be cooled is supplied via an inlet line (1) and collected in an outlet line (3). A liquefiable portion of the cooled medium is collected in a lower region of one of the areas. A fluid supply with a probably defined level is formed, such that an evaporation process takes place in a predetermined and periodic manner to control the temperature of the medium to be cooled by varying the fluid level in the former area.
