<P>PROBLEM TO BE SOLVED: To provide a novel triglyceride with a clearly specified structure considered to be a triglyceride structure found in human breast milk, wherein the triglyceride has a 16-18C saturated fatty acid at position 2 and at least one of unsaturated fatty acids bound to positions 1 and 3 is an ω6, ω9 or ω3 unsaturated fatty acid, and a composition containing the same. <P>SOLUTION: The triglyceride is prepared by using a glyceride which has been confirmed to have a 16-18C saturated fatty acid at position 2 and reacting it with a lipase specifically acting on ester bonds at positions 1 and 3 and the ω6, ω9 or ω3 unsaturated fatty acid or fatty acid ester to achieve transesterification of fatty acids only at positions 1 and 3. <P>COPYRIGHT: (C)2008,JPO&INPIT |
