Soybean paste powder using Hypsizigus marmoreus and a preparation method thereof are provided to enable one to eat soybean paste soup conveniently out of door by diluting the soybean paste powder in hot water, and to remove the bitter taste of salt by using the filtrate obtained from rock-bed water. Soybean paste powder using Hypsizigus marmoreus is prepared by the steps of: (S10) supplying rock-bed water to a filtering device(10) comprising a pine board, a gravel layer, a sand layer, a second filter cloth, a charcoal layer, a loess layer, a first filter cloth and a salt layer, and filtering the rock-bed water to obtain filtrate(20); (S20) mixing the filtrate and Meju(fermented soybeans)(30) in a weight ratio of 55:45; (S30) adding 3wt% of Hypsizigus marmoreus powder(31) to the mixture; and (S40) filtering the Meju fermented and aged for 1yr, followed by freeze-drying and pulverizing it. |
