<P>PROBLEM TO BE SOLVED: To provide a method for detecting propylene glycol mixed in a beverage by which the propylene glycol sometimes mixed in a fermented malt beverage or a beer-like beverage is readily detected with excellent accuracy. <P>SOLUTION: The method for detecting the propylene glycol mixed in the fermented malt beverage or the beer-like beverage includes adding 1-5 wt.% (based on the weight of a sample) NAD (nicotinamide adenine dinucleotide) and GDH (glycerol dehydrogenase) to the sample of a test beverage which has the possibility of the propylene glycol contamination and in which the glycerol is previously esterified to oxidize the propylene glycol in the sample by the GDH, and measuring the amount of NADH in the obtained sample. <P>COPYRIGHT: (C)2008,JPO&INPIT |
