Powdered gelatin product comprises gelatin powder particle, a portion of at least 5 wt.% of gelatin-hydrolysate (dry mass) and a portion of lecithin in an amount of 50-1000 mg, preferably up to 350 mg per kg of the total mass of the gelatin products. Independent claims are included for producing a highly soluble gelatin product comprising: providing a powdered gelatin; providing an aqueous gelatin-hydrolysate-solution with a gelatin-hydrolysate portion of 10-50 wt.%, which additionally contains lecithin in a portion of up to 10 wt.%; contacting and mixing the powdered gelatin with the aqueous gelatin-hydrolysate-solution under the formation of agglomerate-particles; and drying the agglomerate-particle.
