PROBLEM TO BE SOLVED: To provide an efficient method for producingα-D-glucopyranosylglycerol useful as a sweetener. SOLUTION: This method for producing theα-D-glucopyranosylglycerol is characterized by preparing solution containing theα-D-glucopyranosylglycerol obtained by effecting anα-glucosidase on a mixture of saccharides at least containing a maltooligosuccharide and glycerol and then inactivating theα-glucosidase, hydrolyzing the residual maltooligosuccharide in the solution with a saccharifying enzyme, and then or at the same time with the hydrolyzation, adding microorganisms assimilating the glucose and glycerol or without assimilating theα-D-glucopyranosylglycerol for culturing.
