The present invention relates to a method for preparing a whey protein concentrate enriched in beta-lactoglobulin, comprising providing an acid whey; heating the whey at an acidic pH to a particular temperature; ultrafiltering the heated whey over a membrane with a cut-off <= 10 kDalton to obtain a concentrated retentate; microfiltering the retentate over a microfiltration membrane to obtain a permeate; optionally ultrafiltering and/or diafiltering the permeate over a membrane with a cut-off of <= 10 kDalton; and retaining the retentate to obtain a beta-lactoglobulin enriched whey protein concentrate or isolate. The invention further relates to whey protein concentrates or isolates enriched in beta-lactoglobulin and its use in dairy products or enriched in alpha-lactalbumin and its use. |
