发明名称 MANUFACTURING METHOD OF SOYBEAN PASTE STEAK WITH CITRON
摘要 A preparation method of a steak using citron doenjang is provided to supply many nutrients by making marinade and steak sauce with the citron doenjang. A preparation method of a steak using citron doenjang comprises the steps of: (i) sousing the lean meat of short ribs of a Korean beef cattle in marinade for a fixed time, wherein the marinade is made by mixing 60g of citron doenjang, 60g of olive oil, 45cc of soy sauce, 10g of minced garlic, 100ml of red wine, and 3g of pepper; (ii) parboiling the soused lean meat at 100°C for 2min; (iii) covering the parboiled lean meat with vegetable sauce, and boiling the meat while sprinkling butter and red wine on the vegetable sauce; (iv) spreading mushroom duxelles and Foyot sauce on the meat, roasting the meat in an oven until brown at 150°C for 5min, and then sprinkling minced parsley on the meat to form a steak; and (v) spreading steak sauce on the bottom of a plate and putting the steak and a garnish on the sauce, wherein the steak sauce is made by boiling 200ml of demi-glace sauce, 100ml of meat stock (prepared by mixing meat and water in a ratio of 1:1 and boiling down the mixture by half), and 60g of citron doenjang at 100°C for 2min; and then adding 10ml of fresh cream, 2g of salt and 2g of pepper to the boiled citron-doenjang sauce. The citron doenjang used for the marinade and steak sauce is made by adding 1~5wt% of citron juice to 100wt% of soybean paste.
