<P>PROBLEM TO BE SOLVED: To provide tomato juice-containing jelly suppressed in greenery smell inherent in tomato, having beautiful appearance, and potential to offer new variation of tomato processed food: and to provide a method for producing the tomato juice-containing jelly. <P>SOLUTION: The tomato juice-containing jelly is obtained by adding polyphenol to tomato juice-containing liquid, wherein a gelling agent is added to a tomato juice-containing beverage from which hexanol smell caused by hexanol in the tomato juice is reduced and eliminated, so as to coagulate the tomato juice-containing beverage to be formed into a jelly state. <P>COPYRIGHT: (C)2008,JPO&INPIT |
