PROBLEM TO BE SOLVED: To provide a heat exchanger capable of being easily disassembled to be cleaned, free from cross contamination, having high heat exchanger effectiveness and optimal for heating or cooling fluid of high viscosity. SOLUTION: This heat exchanger is composed of an upper peripheral frame 5 to which a top plate 1 is fixed, an upper plate 3 disposed at a lower side of the upper peripheral frame 5 through a gasket, a lower peripheral frame 6 to which a bottom plate 2 is fixed, a lower plate 4 disposed at an upper side of the lower peripheral frame 6 through a gasket, and a composite gasket 9 of metal and rubber disposed along a peripheral portion between the upper plate 3 and the lower plate 4, and a plurality of clamp means 10 fastening the upper peripheral frame 5 and the lower peripheral frame 6. By fastening the upper and lower peripheral frames 5, 6 by clamp means 10, an upper jacket portion 11 and a lower jacket portion 12 in which a heating or cooling medium is circulated, are respectively formed among the upper peripheral frame 5, the top plate 1 and the upper plate 3, and among the lower peripheral frame 6, the bottom plate 2 and the lower plate 4, and a high-viscosity fluid flow channel 13 for circulating high-viscosity heated or cooled fluid, is formed among the upper plate 3, the lower plate 4 and the composite gasket 9.
