<P>PROBLEM TO BE SOLVED: To provide an amino acid-increasing agent for processed fish roe easily and inexpensively increasing amino acid in processed fish roe without changing the balance of amino acid falling in the processed fish roe so as to improve deliciousness of the fish roe. <P>SOLUTION: The amino acid-increasing agent for processed fish roe comprises various kinds of water-soluble minerals extracted through incineration of living matters, wherein the water-soluble minerals comprise liquid minerals extracted through adding water to the living matter incinerated substance, or powdery minerals obtained by eliminating water from the liquid minerals.
