An apparatus for controlling fruit and vegetable ripening is provided to retain the freshness of the fruit and vegetable for a long time, increase the taste of fruit and inhibit the sprouting of new leaf buds. An apparatus for controlling fruit and vegetable ripening comprises: a body(100) with a first storage room(200) and a second storage room(210) to store fruit and vegetables, a storage room to store ethylene gas and an absorption room with an absorption filter to remove ethylene gas; a plurality of sensors to detect the concentration of ethylene gas in fruit and vegetable storage room and ethylene gas storage room; a damper part installed between the storage rooms to control the flow of ethylene gas; an exhaust damper to discharge part of the ethylene gas in the storage room to the absorption room; and a control part to output the signal for opening and closing of the damper part and exhaust damper by concentration of the detected ethylene gas. The first storage room and the second storage room are divided by a first partition wall(110).
