<P>PROBLEM TO BE SOLVED: To provide a method for maturing liquors, capable of shortening the maturing term of vintage Sake thereby enabling mass production. <P>SOLUTION: Liquors such as refined Sake are matured by storing at a temperature from -1°C to 10°C preferably from 0°C to 5°C on a high humidity condition of ≥75% most preferably 85-95% relative humidity to mature. Storage time is preferably ≥3 years. As a storage container for maturing liquors, glass bottles and paper containers, which paper containers are applied alcohol infiltration prevention treatment with an aluminium film, a ceramic-deposited resin film or the like, are usable.
