A meat portion cutter has a feed module that pre-shapes the meat and delivers it into a tube that discharges through an open end via a narrow gap into a matching portioning module. The narrow gap is traversed on demand by a knife blade. The tube end-face and module inlet each have a transport groove that capture and then surrender meat residues from the blade. The residues are shifted by relative motion of the blade and end-faces.
