摘要 A method for preparing a water-soluble antioxidant is provided to save a production cost by using inexpensive vegetable oils as an emulsion stabilizer, and prevent oils from floating on the water when the antioxidant is dissolved in an aqueous solution. A method for preparing a water-soluble antioxidant includes the steps of: preparing two type oil emulsions using oil which is liquid at -5 °C and oil which is solid at ambient temperature at which phase transition occurs; adding an oil-soluble antioxidant to the two type oil emulsions, and then mixing the admixtures; inducing phase transition of the oil emulsion obtained from the oil which is solid at ambient temperature; preparing a double emulsion from the oil emulsion obtained from oil which is liquid at -5 °C, the oil-soluble antioxidant, and the phase transition-induced oil emulsion; micro-encapsulating the double emulsion; and spraying and drying the micro-encapsulated double emulsion to make the oil-soluble antioxidant into a water-soluble antioxidant.
