摘要 A method for preparing a gelled soybean milk-fermented composition is provided to produce the composition which has a good taste and improves a taste of food when used as a food additive. A method for preparing a gelled soybean milk-fermented composition includes the steps of: (a) obtaining a soybean milk having a solid content of 19-36%; and (b) inoculating lactic acid bacteria on the soybean milk to ferment the soybean milk. The lactic acid bacteria are selected from the group consisting of Lactobacillus sp., Streptococcus sp., Pediococcus sp., Leuconostoc sp., and Bifidobacterium sp.
