PROBLEM TO BE SOLVED: To prevent the generation of patterns on the surface of a steel sheet by on-line grinding which is performed during low-speed rolling. SOLUTION: This method is provided with: a pressing force adjusting stage where the pressing force of a pressing device for pressing a grindstone disk against a rolling roll while inclining the grinding surface; a grindstone disk driving stage where the rolling roll is ground by revolving the grindstone disk at a prescribed speed with a revolving device; a grindstone disk moving stage where the grindstone disk is moved along the rolling roll with a moving device; an overlapped amount operating stage where the overlapping state of a lap when the grindstone disk grinds the rolling roll while the grindstone disk is moved with the moving device is calculated and an overlap amount adjusting stage where the overlapping state of the lap is adjusted by adjusting grinding conditions including the pressing force with the pressing device, the rotational speed of the grindstone disk and the moving speed of the grindstone disk on the basis of the arithmetic result in the overlap amount calculating stage.
