METHOD FOR INCREASING THE VIABILITY AND PRODUCTIVITY OF YEASTS INTO ALCOHOL

摘要

A method for the adaptation and acclimatization of yeasts in high salt content conditions with the purpose of creating cells resisting to adverse culture conditions and exhibiting high fermentation capability and viability is disclosed. The production of yeasts characterised by these properties is particularly useful for the production of high concentration alcohol as well as for the holding of fermentations in high salt content conditions.
