PROBLEM TO BE SOLVED: To provide an oil and fat for fry having a moderate solidification speed so as to prevent oil stein regarded as a defect of a liquid oil and fat, having favorable meltability which is lacked in a solid-state oil and fat, and suitable for all material to be fried. SOLUTION: An extremely hardened oil and polyglyceryl fatty acid ester having a melting point of 50-70°C are added to a liquid oil and fat in a total amount of 5-10 wt.%, and the solid fat content is 5-11 wt.% at 10-25°C, and the solidification speed of the oil and fat accounts for 10-30 min at 30°C. The formulation amount of the polyglyceryl fatty acid ester is 0.05-4.90 wt.%. The oil and fat for fry comprises donuts fry oil and fat, french fry oil and fat, or daily-dish fry oil and fat.
