A fryer where, when it is on standby for cooking, the temperature of cooking oil is kept at a level slightly lower than that in cooking, and in cooking, the temperature can be quickly raised to a cooking temperature and where hea t exchange of the cooking oil is easily performed to prevent deterioration of the cooking oil.The fryer can achieve an excellent cooking environment and enhance work efficiency. The fryer has a container for containing, in two vertical layers, the oil and water for purifying the oil, and also has a heater placed in the oil layer. The water in the water layer is sucked from a suction opening provided in the bottom of the container, and the water purified by being passed through a purification water tank is discharged in substantially the horizontal eccentric direction from a water supply opening formed in a side wall at the lower part of the container, which causes the water in the container to swirl. A device for discharging foreign objects in the filtration water tank is also provided.
