Maize groats are boiled in water under pressure with sugar and salt added, dried to a 5-6% moisture content, tempered, and flattened and roasted simultaneously by passing through rolls heated to 230-240‹C. The groat mass emerges from the rolls as thin strips which spontaneously break into flakes under the action of the steam produced within them. |
