<P>PROBLEM TO BE SOLVED: To provide a method for producing seasoning having delicious taste and rich taste favorably used for various kinds of food required for beef flavor-like flavor, in particular roast beef flavor-like one so as to have thickness and richness in its taste, and having excellent roast beef flavor-like flavor. <P>SOLUTION: The method for producing seasoning comprises adding 35-100 pts.wt. of 5'-nucleotide-containing yeast extract, 5-30 pts.wt. of glutathione-containing yeast extract, 2-20 pts.wt. of vegetable extract and 1-10 pts.wt. of monosaccharide to 100 pts.wt. of water, and heating the mixture at 70-150°C for 10 min to 2 h. <P>COPYRIGHT: (C)2008,JPO&INPIT |
