PROBLEM TO BE SOLVED: To provide a fryer having an operation lever which does not obstacle cooking. SOLUTION: This fryer is equipped with a main body section 1 having an oil tub 2 of which the upper surface is opened, a heater box 4 which is arranged above the main body section 1, and is supported freely turnably in the vertical direction, a heater 3 which is extended from the heater box 4, and the operation lever 20. In this case, the operation lever 20 moves the heater 3 between a cooking position T in the oil tub 2 by rotating the heater box 4, and a standing position K on the outside of the oil tub 2. When the heater 3 is located at the cooking position T, the operation lever 20 is freely rockably supported by a connector 10 so that a housed position S1 being closer to the heater box 4, and an operated position S2 being away from the heater box 4 can be selected.
