PROBLEM TO BE SOLVED: To provide an enzyme water-producing apparatus which can ensure the minimally required quantity of an enzyme water, even when some treatment retardation is caused on the daily production of the enzyme water suitable for the states of a kitchen site. SOLUTION: This enzyme water-producing apparatus is characterized by having a production schedule-managing module 63 for managing a production schedule for regulating the production quantity of the enzyme water and the production finish time of the enzyme water in day units, and an equipment control module 65 for controlling various equipments to make a production finish time of the day unit production quantity of the enzyme water read from the production schedule by repeating the prescribed number of enzyme water-producing treatments, wherein an emergency control portion 65d for recovering a retardation not in time for a production finish time on the detection of the retardation charges all of the residual enzyme preparation needed to the production of the enzyme water for that day into a production tank to produce a concentrated enzyme water, followed by discharging the concentrated enzyme water, diluting the concentrated enzyme water with water, and then discharging the diluted enzyme water.
