[Also in Division B1] A homogeneous foodstuffs mixture may be formed by smear mixing, including simultaneous pressing, mixing, stretching, shearing and twisting, ageing the mixture and then subjecting it to a second smear mixing. The method may be used to form a homogeneous spinning solution from a protein slurry and alkali to make artificial meat fibres. A heterogeneous mixture for such homogenization may contain per cent. by weight 13.37-15.84 protein solids; 83.37- 84.40 water, and 0.79-2.23 sodium hydroxide solids. The protein may be obtained by extracting soya beans with hexane and suspending the oil-free soya meal or flakes in aqueous alkali to extract the protein, which is then precipitated from the solution with sulphur dioxide or acetic acid. The process may be carried out in a screw mixer (see Division B1). |
