A fish treating method and an apparatus are provided to process fish to be made into divided fillets for being dried by hanging the fish automatically, consecutively and precisely. A fish treating apparatus includes an abdomen opening knife(3), a fillet knife(5), and a back cutting knife(6). The abdomen opening knife(3) consists of a rotary circular cutter cutting the abdomen of fish on a couple of returning belts. The returning belts maintain the abdomen of the fish facing in a lower direction, and the cut head portion of the fish faces in the returning direction. The back cutting knife(6) consists of one piece of circular cutter that rotates within a vertical surface, and divides a fillet having a tail portion into left and right fillets. |
