<P>PROBLEM TO BE SOLVED: To provide puffed non-fry food not cooked or sprayed with oil, having favorable meltability in the mouth like that of a fried product, excellent in taste and palate feeling, and not getting discolored even when mixed with brightly-colored vegetables or the like: and to provide a method for directly producing the food. <P>SOLUTION: The puffed non-fry food is directly produced through the following process: using grains as main components; homogeneously admixing a composition added with powdery oil and fat, oligosaccharide and vegetables; charging the mixture into a screw-type extruder; and subjecting the mixture to extrusion molding. The puffed non-fry food is suppressed in discoloring and flavor deterioration because the vegetables are coated with powdery oil and fat, and causes no adhesion of oil to hands and the like because the composition contains the powdery oil and fat. <P>COPYRIGHT: (C)2007,JPO&INPIT |
