<P>PROBLEM TO BE SOLVED: To provide an acidic oil-in-water emulsified composition in spite of high concentration DAG (diacylglycerol), excellent in storage stability at low temperatures, having good externals and taste and useful for diet foods and a food as a lipid metabolism improver. <P>SOLUTION: The acidic oil-in-water emulsified composition comprises an oil phase containing ≥20 wt.% diacylglycerol and 0.5-5.0 wt.% crystal suppressor and having ≥15% lysophospholipid ratio to the total phosphatide. <P>COPYRIGHT: (C)2007,JPO&INPIT |
