摘要 <P>PROBLEM TO BE SOLVED: To provide a sparkling liquor with a high GABA (&gamma;-aminobutyric acid) content by subjecting wort consisting essentially of vegetable and fruit juices with a high GABA content such as a tomato fruit juice or a carrot juice to alcoholic fermentation and to provide a method for producing the same. <P>SOLUTION: A yeast is added to the wort prepared by adding the vegetable and fruit juices containing &ge;15 mg/100 ml GABA as a main ingredient. The alcoholic fermentation is then carried out for a prescribed time. Otherwise, the wort to which the vegetable and fruit juices are added is allowed to stand for a prescribed time to convert glutamic acid contained in the vegetable and fruit juices into the GABA with an enzyme derived from malt. A yeast is then added to carry out the alcoholic fermentation for a prescribed time. Thereby, the sparkling liquor with the high GABA content having reduced grassy smell of the vegetables and fruits and excellent preference is obtained. Refreshing and pleasant drunkenness can be expected from relaxing effects of the GABA by drinking the liquor.
