Ham mould is closed at the basket and by an airtight seal and the mould lid is also airtight in design to prevent air inclusions in the product. The mould interior can be coupled via a switch to vacuum or atmosphere alternately. The seal is closed by a switch controlled by the one long wall when this reaches its end setting. The switch links the interior to vacuum after the lid has been closed and the one wall has reached its end setting and then the inters is switched to the outside air immediately the seal starts to move in to its closed condition. |
