摘要 A method of cooking snow crab(Chionoecetes opilio) by dipping snow crab in fresh water, placing the snow crab on pine needles and charcoal in a tray and heating is provided. The method provides cooked snow crab retaining the original taste of snow crab. First, 1 to 1.5kg snow crab is soaked in fresh water for 10 to 15min and dehydrated. Second, 1L water is poured into a cauldron; a wicker tray or tray is put into the cauldron; 100g pine needles and 150g charcoal are placed in the wicker tray or tray; and the snow crab is placed on the pine needles and charcoal to allow the belly portion of the snow crab to face upwardly. Finally, 50ml clear strained rice wine, wine or distilled liquor is poured onto the snow crab; the snow crab is heated at 130 to 170deg.C for 10 to 15min and allowed to settle by its own heat for 10min after turning the heat down to 80 to 120deg.C.
