<P>PROBLEM TO BE SOLVED: To provide natural extract excellent in flavor and nutrition by fermentation extracting/activating components from various mixing food materials which are safe and inexpensive, contribute to health maintenance/promotion, and are expected in various usages. <P>SOLUTION: An extract composition is obtained by combining most suitable each kind of Aspergillus oryzae and each kind of enzyme with the hydrous matter of dry powder of multiple various food material mixtures, and fermentation extracting/activating the components. A method for producing the food material extract comprises combining especially selected each kind of Aspergillus oryzae and each kind of enzyme with the hydrous matter of dry powder of various food material mixtures followed by making act.
