PROBLEM TO BE SOLVED: To provide a steam cooking technique for preventing damage to food to be cooked, which is caused by overheating. SOLUTION: A steam cooker has a cooking chamber 2 for storing the food 1 to be cooked, a steam supply means 3 for the cooking chamber 2, a decompression means 5 for the inside of the cooking chamber 2, and a controller 28 for performing an air removing process for decompressing and exhausting inside the cooking chamber 2 by controlling the steam supply means 3 and the decompression means 5, and for performing a steam-supply cooking process for steam-supply cooking at heating target pressure by supplying steam into the cooking chamber 2 after the air removing process. In the air removing process, the controller 28 sequentially performs a decompression process for reducing pressure in the cooking chamber 2 to decompression target pressure by operating the decompression means 5, and a pressurization process for supplying steam up to steam-supply target pressure by operating the steam supply means 3, and performs control for regulating the steam-supply target pressure corresponding to the heating target pressure.
