A sanitizer for sugar milling process is provided to improve the sugar productivity by decreasing the dextran formation. And method for producing sugar using the same is provided to obtain the sugar with high yield and good quality. The sanitizer comprises a polyalkylene guanidine salt represented by the formula(1) as an active ingredient, in which Y is HCl, HBr, HI, HNO3, carbonic acid, sulfonic acid, phosphoric acid, acetic acid, benzoic acid, dehydrogenated acetic acid, propionic acid, gluconic acid, sorbic acid, fumaric acid, maleic acid, lactic acid, malic acid, citric acid, succinic acid, oxalic acid, tartaric acid, formic acid, glycollic acid, and epichlorohydrin acid, X is a bridging group having a total carbon number of 3-17, n is an integer of at least 1, and m is a mol number of the Y, provided that n/m is 0.1 to 100. The method for preparing sugar comprises the steps of: (a) crushing raw materials of sugar and milling it in the presence of the polyalkylene guanidine salt of the formula(1) so as to extract a juice ingredient; (b) purifying and concentrating the extracted juice ingredient; and (c) crystallizing and isolating the juice ingredient. |
