PROBLEM TO BE SOLVED: To provide an inexpensive inhibitor complex having high safety as an edible material and excellent in inhibitory effects on intestinal tract permeation.

SOLUTION: A chitosan is brought into contact with a defatted sesame extract (TSE). Thereby, amino groups which TSE and chitosan have are bound to each other to form fine particles. An active polyphenol analogue compound and/or active peptide which is active ingredient in TSE is retained in the fine particles to provide an inhibitor complex. A digestive enzyme such as protease is not penetrated into the complex by forming the complex to suppress decomposition of the active peptide.
