PROBLEM TO BE SOLVED: To provide a method for purifying a sucrose fatty acid ester by which impurities such as by-products formed at the synthesis of the sucrose fatty acid ester, and a solvent are efficiently removed, and the purification is efficiently carried out with a small amount of water. SOLUTION: The method for purifying the sucrose fatty acid ester involves feeding a mixture containing the sucrose fatty acid ester as a heavy liquid and water as a light liquid to an extraction device constituted as follows. Two or more mixing chambers for mixing the heavy liquid with the light liquid, and two or more separation chambers for separating the mixture to the heavy liquid and the light liquid are arranged so that several pairs of the mixing chambers and the separation chambers mutually connected so that the mixing chamber may be at the upper position and the separation chamber may be at the lower position, may be arranged in series in the upper and lower direction. The fed light liquid is mixed with the heavy liquid at the lowest mixing chamber and separated at the separation chamber at the lower position. The resultant light liquid is fed through a pipe to the next upper mixing chamber and the separation chamber one by one, and the light liquid separated at the highest separation chamber is discharged. The fed heavy liquid is mixed with the light liquid at the highest mixing chamber and separated at the separation chamber at the lower position, and the resultant heavy liquid is fed to the lower mixing chambers and the separation chambers one by one, and discharged after being separated at the lowest separation chamber.
