摘要 <p>The cooling system useful in a field of development of wines according to a champagne method to prepare bottles with an operation of discharging wines, comprises a tank (3) containing a freezing agent such as liquid nitrogen, a transfer unit (1) for inverting the bottles to make plunge at the end of the tank, and an unit allows a depression of the bottles in the tank. The bottles are equipped with a closure, which consists of a capsule having a concave bottom to make a reservoir (22) to receive and retain a deposit formed during the fermentation of the wine. The cooling system useful in a field of development of wines according to a champagne method to prepare bottles with an operation of discharging wines, comprises a tank (3) containing a freezing agent such as liquid nitrogen, a transfer unit (1) for inverting the bottles to make plunge at the end of the tank, and an unit allows a depression of the bottles in the tank. The bottles are equipped with a closure, which consists of a capsule having a concave bottom to make a reservoir (22) to receive and retain a deposit formed during the fermentation of the wine. The tank cooperates with a unit to maintain a level of constant filling, and is equipped with a unit to limit a depression depth of the bottles in the tank during the displacement of the bottles. The tank is equipped with an airtight unit in an inside of the tank and outside environment of the tank. The tank comprises a lower part having the freezing agent, and is surmounted by a thickener in a transverse direction. The transfer unit comprises support elements of bottles having a hole, which allows the passage of neck of the bottle, and configured to extend above the tank and to cover the hole. The support elements are associated with movable unit of obturator of the hole of passage of neck of the bottle. The unit to limit the depression of depth of the bottles consists of a longitudinal slope immersed in the freezing agent and a bottle closure fixed against the slope. The freezing agent is carried out in a progressive way according to the displacement of the bottles. The transfer unit appears in the form of- a chain arranged in loop without an end and stretched on two horizontal axes of the unit, and a disc assembled in rotation according to a vertical axis of the unit. Each link consists in a palette intended to receive the bottle. The chain is guided in a frame having a higher and lower slide. The higher slide comprises two longitudinal U-shaped guide sections. The disc is made of succession segments having a horizontal pivot in an inside of the segments.</p>
