Provided are an aged concentrate of red ginseng, which is easy to drink, is superior in functional views such as taste, flavor, and color, has a high concentration, and contains a large amount of active components of red ginseng, and a preparation thereof. The aged concentrate of steamed red ginseng is prepared by the steps of: (1) sorting and washing 4 to 6-year-old ginseng; (2) subjecting the washed ginseng to a first steaming at 50-60‹C for 0.5-1 hour, and then performing a second steaming at 80-90‹C; (3) drying the steamed ginseng at 50-60‹C for 24-48hours to produce red ginseng; (4) extracting the red ginseng with six times more alcohol than the used red ginseng 3-5 times; (5) mixing the extracts together, filtrating the mixture, and concentrating the filtrate at 40-50‹C under reduced pressure to obtain the concentrate of red ginseng; and (6) aging the concentrate at 60-70‹C for 3-4 days. |
