The method of the invention, for processing tuna-like fish, and designed to be implemented on a factory ship performing long-line fishing, comprises, in order: stunning the caught fish by applying an electrical discharge to each of said live fish brought to the surface of the water; gathering in each of the stunned fish by means of a basket (3) fitted with a net (3'); killing the stunned fish and preparing them for cutting up; removing the loins from each of the prepared fish; refrigerating each of said removed loins to lower their core temperature to between -3°C and +1°C, preferably between -2°C and 0°C; slicing the refrigerated removed loins for the desired presentation; and freezing said sliced loins. The invention also relates to the factory ship, particularly of the long-line tuna fishing type, equipped for implementing this method. |
