A frost is produced by condensing carbon dioxide charged with coffee flavourings and with water. The frost is then conveyed, by a supply device 2, into a chamber 1 containing a certain quantity of oil renewed by addition and drawing-off via conduits 4 and 5. The carbon dioxide is sublimed and the ice is melted, forming an emulsion with the oil. The emulsion is drawn off and the oil is separated from the water. Application to the incorporation of an oil enriched with coffee flavourings into a soluble coffee powder. <IMAGE> |
