<P>PROBLEM TO BE SOLVED: To provide a method for making grilled eel solving the following problems: products of grilled eel produced by a conventional method for making grilled ell depending on the technique of skilled persons are insanitary, inefficient, uneven or so, and working environment for roasting the ell at ≥1,000°C is very bad and often causes accidents such as burn or fire. <P>SOLUTION: The method for making grilled eel comprises subjecting eel to current-carrying heating, infrared irradiation and temperature regulation substituted for the technique of the skilled persons, and covering a part to be heated with heat insulation material so as to enable sanitary, safe and efficient mass production of grilled eel having stable quality and rich taste. <P>COPYRIGHT: (C)2007,JPO&INPIT |
