<P>PROBLEM TO BE SOLVED: To provide beverage whitener excellent in emulsification stability (namely, free from layer split, precipitation, aggregation, feathering, crack and the like) and exhibiting high stability in dispersion into beverages. <P>SOLUTION: A stabilizing agent for beverage whitener comprises microfilament cellulose and an emulsifier.
