<P>PROBLEM TO BE SOLVED: To provide a method for decreasing acrylamide in food through suppressing generation of acrylamide in a process of cooking a food material. <P>SOLUTION: A method for producing a food decreased in acrylamide comprises adding coriander oil fraction to a food material followed by mixing and cooking the food material, or adding coriander oil fraction to cooking oil followed by cooking in oil the food material using the oil. <P>COPYRIGHT: (C)2007,JPO&INPIT |
